At first glance, you might not consider this soup sexy. In all honesty, it isn’t Ryan Gosling sexy. It’s the kind of soup that you get to know and then discover how sexy it is. It’s in the realization of the awesome complexity of such simple ingredients and the comfort that washes over you as your belly fills and you become content. No, this soup isn’t Ryan but it sure is I-cannot-wait-to-get-to-know-you-better Joseph Gordon-Levitt sexy.
White Bean & Kale Soup
Adapted from Tea & Cookies
- 1 can cannellini beans
- 1 onion, chopped
- 3 tbs olive oil
- 1 andouille chicken sausage, sliced into coins (optional)
- 3 cloves garlic, chopped
- 1 14-oz can peeled tomatoes, diced
- 2-3 cups chicken broth
- 3 tbs tomato paste
- 3 cups chopped kale (approx. 1/2 bag of pre-washed and chopped)
- 2 cups pasta, boiled and drained (Most any shape you have on hand, just not noodles)
- 1 tbs red pepper flakes
- S& P
- Shaved parmesan for topping
In a large soup pot, add the oil and heat the pot on medium high. Add chopped onion, sauteing until soft (Tip: Careful not to burn, you’ll end up with bitter, scorched onions and you’ll have to start again!). Add the sausage and continue stirring for another five minutes or so. Add the garlic and saute 2-3 more minutes.
Add the tomatoes and their juice, tomato paste, chicken stock, and 2 cups of water (more liquid to make it broth-ier) and bring to a boil. Turn the heat down to low and simmer for 15 minutes. Add the kale and beans and simmer 15 until the kale is soft. Add S& P to taste as well as red pepper flakes if you so choose. And your pasta and simmer another five minutes until the pasta is warm.
Bowl it up. Add your parmesan shavings. And enjoy getting to know this soup!
P.S. Soup was even better the second day. It was quite a bit spicier though so if you don’t like the heat, adjust or refrain from the red pepper flakes.
